Clean AND Vegan-yey!! I adapted this recipe from Dreena Burton's "Vive La Vegan"
OK, so I haven't actually *made* these yet, but I am minutes away, so I thought it would be safe to post :)
Clean Peanut Butter Oatmeal Chocolate Chip Cookies
1/2 cup whole wheat pastry flour
1/2 cup oats, whizzed a bit in a blender/food processor (should still have some texture, not fine like flour)
1 t baking power
1/2 t baking soda
2 t raw sugar
1/4 salt
1/3 cup natural peanut butter
1/2 cup maple syrup
1/4 t blackstrap molasses
1 t pure vanilla
3 T canola oil
1/3 cup chocolate chips
Preheat oven to 350 degrees. In a bowl, mix together the flour, oats, baking powder, baking soda, sugar and salt. In a small bowl, mix the peanut butter, syrup, molasses, vanilla and oil, until incorporated. Add wet ingredients to dry, stirring well. Add the chocolate chips and mix. Roll into balls and flatten on an ungreased cookie sheet. Bake for 10-12 minutes, or until golden brown (don't let them dry out!!). Let cool 1 minute on tray then move to cooling rack. Makes 8-10 medium-large cookies.
